Prather Ranch Beef Cheeks Braised in Sangiovese, Shallots and Carrots on top of Sage-Chickpea Puree

Cheeks braised just over 3 hours in 300o F oven; added shallots in last 45 minutes, carrots in last 30.  A handful of whole chickpeas were nice texture in puree. Enjoyed with Jasper and Loren and a Vino V 2006 Indigeno Syrah; perfect pairing.
